Vegan Chocolate Truffles

This Vegan Chocolate Truffles recipe, is a great healthy sweet treat. They are easy to make but hard to resist, so this guilt-free version, is great to have around.

Ingredients

1 cup almonds

1/3 cup raw cacao or you could use carob powder

1 tsp vanilla essence

1/4 cup maple syrup (you may need to add more if you like it a bit on the sweet side)

1 Tbsp coconut oil (liquified not solid)

 

Method

    1. Place almonds in the food processor and process until crumb like texture.

    2. Add all remaining ingredients and process until smooth.

    3. Roll into balls. Then you can roll them in coconut, nuts or chia seeds.

    4. Place in the freezer for 30 minutes to set.

    5. Store in the fridge for up to 3 weeks.
