Low-Carb Chocolate Brownies

Who doesn't love Chocolate Brownies? For those who love the fest of chocolate, butter and indulgent sweetness, this fudgy, chocolatey sugar free brownie is the answer. It is so much healthier than traditional brownies, allowing you to happily enjoy this guilt-free treat. Try this recipe!

(Serves 16)

Ingredients

1 Egg

1 Egg Yolk

3 Tbsp Coconut Oil (melted)

1/2 cup Coconut sugar or Maple Syrup or Monk Fruit Syrup

1 tsp Vanilla

1 1/2 cups Almond Meal

1/3 cup Cacao Powder

1/4 tsp Celtic Sea Salt

1/4 tsp Baking Soda

1/4 cup Cocao Nibs

1/4 cup Walnuts or Almonds

 

Method

    1. Heat your oven to 180 degrees Celsius and line an 20 x 20cm pan with baking paper.

    2. In a large bowl using an electric hand mixer or by hand, beat the eggs, coconut oil, coconut sugar and vanilla until it begins to lighten in colour, about one minute.

    3. Stir in the flour, cocoa powder, salt and baking soda. Then, fold in the cacao nibs and nuts.

    4. Pour into the baking pan and bake until the top is JUST set about 14-16 minutes.

    5. Place a heating pad into the refrigerator and place the pan inside the refrigerator immediately for 15 minutes.

    6. After 15 minutes, let cool on the counter completely. Cut into squares.

    7. Enjoy!

 

I recommend storing these brownies in an airtight container. They will last in the fridge in a container for up to a week! If you want to freeze them and enjoy them when needed, feel free to place the airtight container, labeled, into the freezer and they will last up to 3 months.
