Millet & Blueberry Muffins

These Millet & Blueberry muffins are a healthy alternative to the standard blueberry muffin recipes. It is full of healthy ingredients and in particular, blueberries which help support your immune system.

Ingredients

1 1/2 cups apple juice

1/2 cup hulled millet

1/2 cup coconut flakes

1/2 cup millet flour

1/4 tsp baking powder

1/2 cup blueberries

2 eggs

1/4 tsp vanilla essence

1/4 cup olive or unrefined coconut oil

 

Method

      1. In a small frying pan bring the apple juice to the boil. Add the millet and reduce to simmer. Cover the pan and cook for 20 mins until the millet is slightly firm in the centre. Set aside to cool. Preheat the oven to 180°C.

      2. Toast the coconut flakes in a small frying pan over a medium heat for a few minutes until golden.

      3. Combine the millet flour, baking powder, cooked millet and blueberries in a bowl.

      4. In another bowl, mix the eggs, vanilla essence and oil until combined, then stir into the dry mix. Pour the muffin mix into a greased muffin tray and bake for 25 minutes.
