Rainbow Salad

This Rainbow Salad is a quick, healthy salad packed full of vitamins, minerals and antioxidants. It is a perfect summer salad to accompany fish, chicken, meat felafel or boiled eggs. It is also great for lunch.

(Serves 4 as a side or 2 as a main meal)



1 Carrot grated

1/4 Purple Cabbage finely grated

1 meidum sized Beetroot grated

1/2 medium sized Red Capsicum finely sliced

3 Tbspn of Red Cabbage, Beetroot and Ginger Sauerkraut (optional)



1 tsp of Maple Syrup or Honey

1 tsp of Dijon or French Mustard

3 Tbspn Virgin Olive Oil

1 1/2 Tbspn Balsamic or Apple Cider Vinegar



    1. Place all the vegetables in a serving bowl and mix to combine.

    2. Add all the dressing ingredients to a jar and shake well.

    3. Add the dressing to the salad and stire to coat the vegetables.

    4. Serve on its own or with your favourite proteins.
