Healthy Fruit Crumble
Ingredients
2 cups almond meal
1 large bunch of rhubarb (approx 7 storks), trimmed and cut into 2cm pieces
OR 5 green apples peeled, cored and cut into eighths
1 Tbsp honey or maple syrup
2 Tbsp water
2 tsp mixed spice
4 Tbsp rolled oats
2 Tbsp chopped almonds
2 Tbsp flour (any type is okay)
2 Tbsp shredded coconut
2 Tbsp organic yoghurt
Method

Place the rhubarb/apples, water, honey and mixed spices into a large saucepan and simmer until rhubarb/apples are cooked. Remove and place in a greased shallow baking dish.

Place the rolled oats, chopped almonds, flour, and coconut into a bowl and mix well.

Add the 2 Tbsp of yoghurt and mix together with the dry ingredients to form a crumble.

Place the crumble mix on top of the cooked rhubarb/apples.

Bake in a medium oven (180°C) for around 15 to 20 minutes until the crumble mix is golden in colour.

Serve with yoghurt, cream, ice-cream or on its own.
Note: Some of the apples may be replaced with blueberries, strawberries or other fruits as desired. This recipe also works well with stone fruits such as peaches.
