This Atlantic Salmon with Yakitori Noodles dish, is a great way to add omega-3 into your diet.
Ingredients
1/2 kilo Atlantic salmon/Ocean trout fillets
1 packet of Hokkien, Rice or Udon Noodles
2 cups of washed baby spinach
2 snow peas topped and tailed
1 red capsicum cut into chunks
1 Tbsp olive oil
3 Tbsp of toasted sesame seeds as a garnish
For Marinade:
1/4 cup of mirin
1/4 cup of tamari or soy sauce
2 tsp sesame oil
1 tsp grated ginger
Method

Preheat oven to 200°C.

Mix marinade ingredients together and brush over the fish. Place onto baking dish lined with non-stick paper.

Bake fish for 8 to 10 mins until opaque. Remove from oven and break fillets into chunks and set aside.

Wash noodles under hot water to separate and drain.

Heat wok or frypan and add sesame seeds stirring until toasted. Remove from heat and set aside.

Return wok to the stove and heat 1 tbsp either water or oil. Add capsicum and snow peas and stir fry for 5 mins. Next add the spinach and stir until wilted. Next stir in noodles, fish and sesame seeds until all is heated through.

Serve in bowls.
