Bake Free Fruit Balls

Healthy eating is the key to healthy living. It is important to follow a diet that makes sure your body receives all the vital nutrients to maintain health with a strong immunity system. But sometimes, it is difficult to halt yourself from eating something tasty and sweet. These Bake Free Fruit Balls are a healthy nutritional, sugar free, preservative free snack option. They provide your body with essential nutrients, boost immunity and add a daily snack to your diet that is tasty to eat. They are great packed in a lunch box, or taken on a picnic.

 

Ingredients

1/2 cup dried apricots

Juice of 3 lemons

1/2 cup walnuts

1/2 cup sultanas

1/2 cup raisins

1/2 cup dates

1/4 cup sesame seeds

1/2 cup coconut

 

Method

    1. Boil the dried apricots in lemon juice for 5 minutes or until liquid disappears.

    2. Put walnuts, all fruit, coconut and hot softened apricots into food processor. Process to desired consistency.

    3. Shape into balls with wet hands. Place in fridge.

Note: Other options are prunes, figs.

 

Storage: If you can resist eating them all right after you make them, they can be refrigerated for several days. Packaged in an airtight container or freezer bag, energy balls can be stored in the refrigerator for about a week. If you wish, you can even keep them longer, up to 3 months, by putting them in the freezer. Just remember to take them out several hours before eating them so that they can regain their original texture and all their flavours.
