Orange/Lemon Poppy Seed Muffins

Orange or Lemon Poppy Seed Muffins


1/4 cup poppy seeds

1/3 cup lemon or orange juice

2 Tbsp lemon or orange rind

1/4 cup almond or coconut milk

1/2 cup of honey, maple syrup or xylitol

1 Tbsp baking powder

2 cups ground almond meal or gluten free flour

2 eggs

1/2 cup olive oil or melted coconut oil



      1. Sift dry ingredients into a bowl and stir with a fork.

      2. Beat eggs in a separate bowl and add milk, orange juice, sweetener, and oil and mix well.

      3. Add this mixture to the flour and combine with a fork.

      4. Stir in orange or lemon rind.

      5. Pour into individual muffin tray and bake in 200°C oven for 20 mins.
