This tasty Orange or Lemon Poppy Seed muffin recipe. This recipe is a twist on the original lemon version, made with real orange/lemon juice and rind and dotted with poppy seeds. So full of citrus flavour! Perfect for a snack, and so easy to make.
Ingredients
1/4 cup poppy seeds
1/3 cup lemon or orange juice
2 Tbsp lemon or orange rind
1/4 cup almond or coconut milk
1/2 cup of honey, maple syrup or xylitol
1 Tbsp baking powder
2 cups ground almond meal or gluten free flour
2 eggs
1/2 cup olive oil or melted coconut oil
Method

Sift dry ingredients into a bowl and stir with a fork.

Beat eggs in a separate bowl and add milk, orange juice, sweetener, and oil and mix well.

Add this mixture to the flour and combine with a fork.

Stir in orange or lemon rind.

Pour into individual muffin tray and bake in 200°C oven for 20 mins.
