Nothing Naughty Muffins

These Nothing Naughty Muffins are a healthy, delicious and nutritious alternative. As the name says, there is nothing naughty in the ingredients.

Ingredients

2 cups self-raising wholemeal or stone ground flour

1 cup soymilk

3 Tbsp honey or pear juice concentrate

1/4 cup olive or sunflower oil

1 egg

1 cup blueberries, OR
     2 mashed ripe bananas, OR
     grated apple with chopped pecan nuts

 

Method

    1. Heat oven to 200°C.

    2. Sift flower into bowl, beat egg in a separate bowl and add milk, sweetener, and oil - mix well.

    3. Add this mixture to the flour and combine with a fork.

    4. Pour into individual muffin tray and bake in 200°C oven for 20 minutes.

Variation: If on a gluten free diet substitute with 1/2 cup rice flour and 1/2 cup potato flour, plus baking powder.
