This is a healthy, easy, paste you can add to stews or spread on meat, chicken or fish.
1 bunch of fresh coriander
1 bunch of fresh mint
2 cloves of garlic
2 teaspoons ground cumin
1 teaspoon ground ginger
1 teaspoon ground coriander
Juice of 1/2 lemon
2 tablespoons olive oil
Add the coriander leaves to a food processor, then add most of the mint leaves.
Peel and add the garlic, along with the remaining chermoula ingredients and 2 tablespoons of olive oil.
Season lightly with salt, then whiz to a smooth paste, adding a splash of water to loosen, if needed.
