Baked Tofu

This tasty and nutritious Baked Tofu, is also a great filling for lasagnas, enchiladas, nachos, or just with vegetables and rice.

Ingredients

200 grams firm tofu cubed

3 Tbsp nut butter

1/4 cup tamari

1 Tbsp olive oil

1 tsp chopped ginger

1 clove garlic crushed

1/4 cup hot water

1 tsp honey or maple syrup

1 tsp apple cider vinegar

 

Method

    1. Place nut butter and tamari in a small bowl or jug and combine with a fork.

    2. Add the oil, ginger, garlic, hot water, honey and apple cider vinegar and stir.

    3. Place tofu in a shallow baking dish and pour over the marinade.

    4. Marinate for 3 to 4 hours in the fridge.

    5. Preheat the oven to 180 degrees Celsius.

    6. Bake in the oven until the tofu has a crispy golden coating (approx 20 mins) ensuring to stir occasionally.

Note: This makes a great filling for lasagnes, enchiladas, nachos or just with vegetables and rice.
