You can't go wrong with these Nothing Naughty Anzac Biscuits. They are great biscuits, not only around ANZAC time, but all throughout the year.
1 cup ground almonds
2 cups organic rolled oats
1 cup ground organic rolled oats
3/4 cup organic desiccated coconut
2 Tbsp water
1/4 cup walnuts (chopped)
100ml organic coconut oil
80ml organic honey or maple syrup
2 tsp vanilla essence or 1 tsp paste
Heat oven to 150°C.
Combine almond meal, rolled oats, ground oats, coconut and walnuts in a bowl.
Add coconut oil, maple and vanilla and mix through until well combined.
Divide into balls around 2.5cm in diameter and place on a baking tray lined with baking paper.
Bake for 25-35 minutes until golden and cooked through.
Rest on the tray until cool.
Store in an airtight container for up to 2 weeks.
